Our Pecorino Romano is a semi-matured sheep's cheese that is ideal for grating over pasta. It's a D.O.P. product, which means its high standard reflects a long and authentic heritage entwined with that of Sardinia. 

Salty, and slightly spicy, this traditional cheese has a firm consistency and is lighter in colour than a fully mature pecorino cheese. Grated over pasta, or in traditional casseroles, soups and stews, it adds both flavour and piquancy to the meal.

Try it on a dish with beans, along with crusty bread or pane Carasau, for a true taste of the countryside.

Sardinian semi-matured sheep's cheese 

Many of the classical Roman authors such as Hippocrates, Varro, Pliny the Elder, and Columella make reference to pecorino cheeses of this type.

They formed part of the rations of the Roman legions, and it's easy to see why. This would be a high energy, easily transportable food that would also provide much-needed salt when soldiers were on active duty. 

Today, Sardinia is one of the leading producers of this historic cheese, along with Lazio and Grosseto in Tuscany. That's because the product requires rennet produced from the same flocks, and Sardinian sheep are of exceptional quality due to the natural way the flocks are reared.
