Wild boar sausage is a hearty option when combined with traditional malloreddus pasta, datterini tomatoes and topped with our pecorino tipo fiore. It's also an inspiring ingredient to include in a winter special such as stew or soup.
Wild boar are indigenous to Sardinia and have a specified hunting season. The fact that they are wild and free to forage on a range of foods means that the meat is packed with natural rustic flavours that augment the pork. The resulting meat is cured for a set time and shaped in natural casings.
