A truly versatile product, popular in many Sardinian homes, it can best be used cold as part of an antipasti selection with pane carasau, as a topping on flat bread with melted pecorino or in a pasta sauce. One of our favourite recipes is cooked with lightly sautéed onions and datterini tomatoes then partnered with our organic rigatoni pasta to get a good grip on the rustic flavour.
Wild fennel seeds have been used for centuries to give cured meat a slightly sweet sensation. From a humble history to a modern speciality, this is one of the celebrated preserved foods that was equally as essential to Sardinian shepherds while away looking after their flocks, as it was to those at home.
We can also guarantee that our salamino is totally free from allergens and preservatives, being made to a traditional artisan recipe using natural ingredients and time-honoured processes.
