This cured sausage is a classic Italian combination of finely minced pork and whole wild fennel seeds. Appreciated for its soft texture, this meaty delicacy will melt in your mouth.

Fennel salami - Finocchiona salami
Made according to ancient methods, during dry curing the aromatic flavour of fennel fuses with the meat and results in a delicate, fragrant salami.
Fennel salami is said to originate in the Middle ages in Tuscany. With pepper being the standard salami seasoning at the time it was too expensive for the general population, while the vast open countryside of Tuscany grew fennel in abundance.
Fennel wasn’t just used out of convenience though, salami makers noticed the seed was rich in menthol, which provided a light anaesthetic for taste buds and the winemakers often offered this salami to customers to mask the taste of their lower quality wines. Today the recipe remains similar however our love for this historical meat has been refined to appreciate it as it is.
