Our beef bresaola is a cured and air-dried speciality made from the finest cut of beef, the rump.

It takes plenty of time to create the unique qualities of bresaola and its superb flavour. The special attribute of bresaola is that it's a very lean meat, air-dried and salted over a three month period until it takes on a rich and distinctive deep red colour.

Beef Bresaola 

The texture of bresaola is firm, yet it melts in the mouth with a deliciously sweet and aromatic flavour. The leanness of the meat makes it an excellent high protein, low fat antipasto option. It's delicious with bread and makes a superb sandwich on the traditional rosette rolls of Lazio. We love it on our Pane Carasau with just a drizzle of oil  and a squeeze of lemon. 

Bresaola is a speciality of the Valtellina valley in Lombardy region, where meat from the finest grass-fed beef is used. Every scrap of fat is removed before rubbing with salt and spices such as juniper berries, cloves, cinnamon and nutmeg. Traditionally, the mountain air dries the meat to perfection, producing an outstanding charcuterie.
